Toxic Kidney Beans

I have been eating kidney beans my entire life, and this is the first I have heard of this.

I guess I have been very lucky.

    The lesson isn't that you should "never" slow-cook dried beans; the lesson is that you should fully cook dried beans (just as you would fully cook chicken or pork). And other people must use their slow-cookers differently than I do: even on low, I always come home to a bubbling crock pot, which means my beans are well over 100C and have been for hours.
