Brownie Drops

Brownie Drops

Preheat oven to 350 degrees.

2 packages (4 ounces each) sweet baking chocolate
1 tablespoon butter
2 eggs
3/4 cup sugar
1/2 teaspoon vanilla
1 1/4 cup flour (may need to add slightly more to get right texture)
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
dash salt
3/4 cup finely chopped walnuts

Melt chocolate and butter in a double boiler.  Cool.

In large bowl, beat eggs to foamy.

Add sugar 2 tablespoons at a time, beating constantly until light and thick.

Blend in cooled chocolate mixture and vanilla.

Add dry ingredients and fold in nuts.

Drop by teaspoons onto greased cookie sheet.

Bake 10 minutes, or until crispy on outside and chewy on inside.

Cool.  Store tightly covered.

Makes 3 dozen cookies.

Myrt Buckley's Rice Pudding

Very special thanks to Elizabeth for finding this lost treasure.

1 c rice regular
3 c water
1/2 t salt

Simmer 40 minutes til water gone

Add 3/4 c sugar

Pour into pan with rice:

2-3 eggs - beat separately
1 can evaporated milk 11 oz
plus 1 1/2 can regular milk

Put in 11 x 13 pan

Sprinkle with nutmeg and/or cinnamon

Cook 350 degrees just under 1 hour

Chocolate Custard Cookies (Christmas Cookies)

Also know as Fudge Meltaways in some circles.

In top of double boiler, put:

1/2 cup butter
1 egg, beaten
1/4 cup sugar
5 tablespoons cocoa

Cook until thickened and add:

1 teaspoon vanilla
1 cup coconut
2 cup graham cracker crumbs
1/2 cup chopped nuts

Mix well and press into bottom of 9 x 13 cake pan.

Refrigerate while mixing the following:

2 cups powdered sugar
1/4 cup softened butter
3 tablespoons milk
2 tablespoons powdered vanilla pudding (not instant)

Put this on top of first layer and chill for 20 minutes or longer.

Melt 3 squares Baker's semisweet chocolate.

Spread over top of custard layer.

Chill and cut into squares.

Old Fashioned Sour Cream Drops

Old Fashioned Sour Cream Drops

Preheat oven to 400 degrees.

Mix together:

1/2 cup soft shortening
1 1/2 cup sugar
2 eggs

Stir in:

1 cup thick sour cream
1 teaspoon vanilla

Sift together and stir in:

2 3/4 cup sifted flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Chill at least one hour.

Drop rounded teaspoons about 2 inches apart on un-greased cookie sheet.

400 degrees at 8-10 minutes, or until delicately browned.

Carol Hoover's Rice Pudding

Rice Pudding by Carol Hoover

2/3 cup rice
2/3 cup sugar
2 quarts milk
1/3 cup margarine
pinch salt
1 teaspoon vanilla (at end)

Mix all ingredients except vanilla.

Bring to boil on low, cook 2 hours, stirring from time to time.

Stir in vanilla.

Pour into heat-proof bowl.
