Sourdough Crackers
Sourdough Crackers
Because it really grinds my gears to throw away sourdough starter.
This recipe needs tweaked (see parenthetical comments in recipe below). Flavor is good but needs more salt and needs to be crispier.
Particularly good with cream cheese and Chili Jam from American Spoon Foods.

Sourdough Crackers Recipe
Preheat oven to 350 degrees.
1 C sourdough starter
1 generous pinch of salt (not enough)
1 C flour
1/4 C olive oil
Combine ingredients, knead into a dough, roll as thin as you can on a parchment paper on a baking sheet.
Bake 20 minutes (not enough).

Sourdough Cookies
Sourdough Cookies
Because it really boils my giblets to throw away sourdough starter.
Preheat over to 350 degrees.
1/2 C (one stick) butter, softened
2/3 C sugar (half white and half brown is good)
2 eggs
1 C flour
1/2 t salt
1 t baking soda
1 t baking powder
1/2 C sourdough starter
1 T vanilla extract (Yes, tablespoon, not teaspoon)
Chocolate chips (optional)
Chopped nuts (optional)
Dried fruit (optional)
Mix butter and sugar together, beat until creamy.
Beat eggs until fluffy, add to sugar/butter mixture. Stir to combine.
Combine dry ingredients (flour, salt, soda, powder). Add to butter/sugar/egg mixture.
Add sourdough starter and vanilla. Stir to combine.
Add optional ingredients if desired.
Ok, now, there is an art to this. If the mixture is too dry, add a little more sourdough starter. If the mixture is too wet, add a little more flour. You want a classic cookie dough texture. If you are such a beginner that you do not know what this means, ask your Grandmother.
Drop by spoonfuls on a cookie sheet.
Bake 10-15 minutes until nicely browned. Why the big range in time? Because it depends on how you judged the texture of your cookie dough, and what optional ingredients (if any) you chose.

Hales Corners Style Bean Mush
Bean Mush, Hales Corners Style
You can search the internet for Calico Beans or Four Bean Casserole and get a million versions of the same idea.
1 pound bacon (you can use less, from a few slices up to the full amount)
3 pounds ground meat (you can use less, from 1-3 pounds)
[Nancy prefers ground turkey, most recipes call for ground beef]
1 onion, chopped
1 can pork & beans
3 cans beans, drained (kidney, great northern, butter, pinto, etc.)
[I try to use 3 different kinds but it is whatever beans you have/prefer]
1 squirt yellow/brown mustard
1 squirt ketchup
2T brown sugar (I have toned down the sweet a lot from years ago)
Broth (amount varies)
Using a very large pot:
Fry bacon until crisp. Reserve grease. Drain bacon on paper towels.
Fry onion in bacon grease until translucent.
Add ground meat to onion, fry until meat is browned. Drain grease.
Add beans, mustard, ketchup, sugar. Add crumbled bacon.
Add enough broth to get the consistency you want, soup to stew.
[Leftovers will thicken quite a bit when refrigerated]
Heat through.
Additional notes:
If I have time, I put the finished product into a very large casserole dish and bake it for 30 minutes at 350 degrees.
Or, sometimes if timing requires, I make it earlier in the day and put it into the slow cooker so that it is hot at supper time.
In my opinion, this is one of those recipes that gets better as the flavors meld.
Very good served with scratch biscuits.

Sourdough Pancakes
Now that I have sourdough starter, I am always looking for ways to use the discard because it really grinds my valves to throw it away.
Sourdough Pancakes
1 cup sourdough starter discard
1 T sugar
1 t baking powder
2 eggs
Beat eggs until frothy. Add starter and dry ingredients.
Mix until just combined.
I use an electric griddle set to 350 degrees.
You can see the results above.
Grilled Beef Chuck Eye Steak
I love grilled beef chuck eye steak.
My local grocers do not always have it, but when they do, I always try to buy it.
Almost as good as rib eye, and much less expensive.

1/2 cup mayonnaise
1 cup shredded cheese (cheddar is good)
1 T chopped onion ( I typically use more than this)
Combine ingredients in oven-proof dish.
Bake at 350 for 25 minutes.
Serve with your favorite crackers or crusty bread.
